Fluffy and soft with crispy edges and a rich, nutty flavor, our blini are handmade in Houston, Texas using our tried and tested chef crafted recipe. A true original, our traditional yeasted buckwheat cocktail blini use only the finest ingredients to produce a richly flavored blini that will perfectly complement a variety of toppings, including caviar, smoked and canned seafood, roasted veggies, fine cheeses, and fruit spreads. The possibilities are endless.

The cocktail size (1.7 inches) makes them ideal for appetizers, hors d’oeuvres, charcuterie, and cocktail hour.

Quick and easy to reheat (No thawing necessary): In the oven, reheat for 3-4 minutes at 375. On the stove, reheat on medium heat until edges are crispy, about 2-3 minutes. Microwave for 15-30 seconds until heated through. Add your favorite toppings and enjoy!

Can be kept frozen or refrigerated. Store unopened in the refrigerator for up to 3 days, then freeze. Can be kept frozen for up to 2 months. Always heat completely before eating.

It’s a labor of love that takes over 36 hours, but it is worth every second, because these Lemon and Creme Fraiche Blini are a perfect complement to both sweet and savory toppings. Try them with a variety of cheeses, fresh fruit and fruit spreads, citrus curds, canned and smoked fish, and fine herbs. Stack smoked salmon with creme fraiche and dill, top your favorite caviar with freshly grated lemon zest, or layer luscious lemon curd and whipped cream cheese with blueberries. What is a blini?

Blini are small, delicate pancakes originating from Russia, traditionally made from a batter of flour, eggs, and milk, sometimes including yeast for a light, airy texture. They can be made with buckwheat flour, giving them a nutty flavor, or with a mix of wheat and buckwheat for a softer texture. All of our blini are made with yeast, and our traditional blini are a blend of buckwheat and wheat flour, which produces a rich tasting blini that is also soft and fluffy.

Blini have a long history dating back to ancient Slavic traditions, where they symbolized the sun and were associated with the end of winter. They are especially significant during Maslenitsa, a week-long Russian festival celebrating the arrival of spring, when families prepare and share stacks of blini. Historically, blini were baked in Russian ovens, but today they are typically pan-fried.

Blini are versatile, and can be served sweet or savory. Sweet options include jam, honey, chocolate spread, or fresh fruit, while savory options feature caviar, smoked salmon, sour cream, cheese, or minced meat.

They can be rolled, folded, or stacked, making them suitable as appetizers, main dishes, or festive treats. Smaller blini, like the ones we make, are often used as bite-sized hors d'oeuvres, while larger ones can be a full meal.
